FREDERIKSDAL ’NIELSTRUPMARK’The world's first cherry wine produced from a single field. Nothing less!
Nielstrupmark is the outcome of an extreme experiment.
In 2009, we tormented six rows of cherries trees in the orchard we call ‘Nielstrupmark' by denying them so much as a drop of fertilizer.
The trees offered only half the amount of cherries we might expect - but those cherries possessed a perfectly unexpected harmonious and sweet taste.
We fermented these cherries separately for five days, unpitted, in big, open trays before pressing the juice and fermenting it further in stainless steel vats.
Finally, we fortified it with our own brandy… itself distilled from wine from the same orchard, Nielstrupmark.
"The nose is clean, the flavour deep and intense, almost feminine, with notes of wild raspberry. Unfiltered. Decant in good time - or save for 5-10 years." Vinavisen.dk
"Danish cherry wine has not just undergone a revival. It has become a gastronomic raison d'être." Rasmus Holmgård, wine critic
Nielstrupmark is from the vintage of 2009, limited to 4,500 50cl. bottles and eight magnums.
