Frederiksdal Cherrywine 'Sur Lie'The perfect dessert wine, tailor-made for the classic Danish dish risalamande - sweet rice and almonds.
Sur lie, ‘on the lees', means that the wine has been allowed to age lying on its sediment, affording it greater body and complexity.
When we ‘rack' the wine - decant it from the vat, in other words - we ‘save' a few hundred litres to stand in peace and quiet on the lees over winter, until it's ready.
'Sur Lie' is blended from two vintages, 75% from 2009 and 25% from 2010, and then matured for the most part in 225- and 450-litre barrels.
