VEAL STEAK WITH PLUMS AND FRIED POINTED CABBAGE

1 4 pers Serveres til: Reserve

4 veal steaks
12-16 plums cut into quarters
1 pointed cabbage cut in 8 pieces
1 dl veal sauce
2 finely chopped shallots
½ dl Frederiksdal Vintage
salt and pepper rosemary
mild honey
vinegar
olive oil
butter

Blend the shallots in a small pot together with the stones from the plums, steam the onions tenderly in a little oil. Cook with cherry wine – let it almost boil away. Add the veal sauce and let it boil. Add salt and pepper. Remove the stones from the plums. Roast the cabbage on a dry pan. Roast the plums. Add rosemary, honey, vinegar, salt and pepper. Roast the steaks in butter and add salt and pepper. Serve with small baked potatoes.
